Farmer's Salad

Salads are so incredibly good for you, but sometimes they can get boring and flavorless. Today for lunch I was craving a salad that was packed with lots of veggies and would also satisfy my undeniable hunger. After adding in some fruit to the mix, I topped it off with a homemade honey mustard vinaigrette.

Here's what you'll need:

For the Vinaigrette:

  • 1 1/2 tbs. mustard (I used a deli mustard that has some horseradish and white wine in it)
  • 2 tbs. apple cider vinegar
  • 1 tbs. olive oil
  • 1 tbs. water
  • 1 1/2 tbs. organic honey
Serves one
​Combine the ingredients into a small bowl and whisk together to mix well. If you would like to make the vinaigrette thinner, add a small amount more of water, and if you would like to thicken it up, add a slight bit more honey.

For the Salad:

  • I used equal parts organic kale, organic spinach, and organic arugula.
  • Diced baby carrots
  • Sliced red onion
  • Shredded red cabbage
  • Fresh raspberries
  • Sliced red apple
  • Nitrate and hormone free oven roasted turkey breast (or another source of protein)
  • Crumbled sweet potato chips (optional, for an added crunch)
​Combine the first four ingredients to make the size salad you would like. Cut the turkey into chunks/strips and add to the bowl. Top with your raspberries and apple slices, and sprinkle on the sweet potato chips.
​Drizzle on the dressing, and you're good to go!
